we are loving being busy at work, long days....
but so, so Blessed!!!

it is Friday...so that means Pizza Night...

we got a new Pizza Stone from a RADA fund raiser,
tried their recipe for dough....we liked it, but this recipe
only makes enough for two 12 inch crusts.

Pizza Dough :
3 cups flour
1 tsp salt
1 Tbsp sugar
2 Tbsp olive oil
3/4 cup hot water
2 1/4 tsp yeast

combine water, yeast and sugar together and set aside.....mix flour, oil and salt in your kitchen aid...attach the dough hook...add in the yeast water and stir for 8 minutes...place dough in a lightly oiled bowl and put in a warm area to double in size (it took about an hour)....then divide in half and roll to fit your pan.

back to normal temperatures today...but the Sun was
out and that makes all the difference.

means it is small groups from church.....
wanted to take a picture of everyone....but I forgot....

woke up in the 50's again this morning....just Crazy!!!
the rain finally stopped this afternoon and we saw a few
peeks at the sun for a bit.

Another busy day at Tri-State...this is supposed to be
our busy season....so this is a GOOD thing!!!

the Sunset this evening was BEAUTIFUL.....


the focus after dinner tonight was getting the CHRISTmas
cards all ready to mail out....

hard at work stuffing the envelopes....

what an amazing day temperature wise....
woke up this morning to 50 degree temps....the only
bummer is that it has been foggy, rainy and cloudy...still
no sun....however...it did reach the 60's today...
you never know what to expect in Michigan!!!

crazy busy at Tri-State today and we are so Thankful!!!!

made some Eggnog for Ross after he got home from work....
used a recipe on the Martha Stewart website...

Eggnog :
4 cups milk
1 1/3 cups sugar
12 large egg yolks
1 cup heavy cream

mix the sugar and milk in a saucepan over medium heat until sugar is dissolved...it took a couple of minutes...in a separate bowl....whisk the egg yolks (we used the handy water bottle trick to get the egg yolks separated....the eggs have to be at room temperature in order to have this work well)


put the water bottle over the yoke.....squeeze and release and it will suck only the egg yolk into the bottle...

whisk the egg yolks in a separate bowl and add the milk/sugar mixture...


whisk this all together and return it to the pan over medium heat.....do this for 20 - 25 minutes....
do not let it simmer...keep stirring it until it coats the back of a spoon....


quickly strain into a bowl....


add heavy cream and whisk again....let it cool completely, then refrigerate. Tasted Amazing!!!

had salads for dinner....our lettuce and tomatoes from the garden.....Gotta Love It!!!!

had an AMAZING day at church today....

made some Cheezy-Salza for munching on
while watching the Lions play....

Cheezy-Salza Dip :
2 cups salza
1 cup cream cheese (softened)
1 cup yellow cheese (softened)
1 cup diced green peppers

combine everything into a bowl and whisk it all together....


 would have added jalapeno peppers too but didn't have any available....
looks kinda rough but it tasted Yummy!!!

had breakfast for dinner....french toast and sausage


made the rest of the sandwich bread into french toast
and put it into the freezer.....perfect to pull out and pop
into the toaster....instant breakfast....LOVE IT!!!

did a cool thing at church today...we offered FREE
babysitting to the community so they could go do
Christmas shopping in town without their little ones...

hit the 50's today....that is warm for the end of
November in Michigan...the weekend is supposed
to be even nicer....Ross and i were commenting this
morning about how we could not remember the last
time it rained...hope we get some kind of precipitation soon.

went to work with Ross today...we have been in the Embroidery
Service Business since the late 80's and in business for ourselves
since 1994...so it was Great today to see a couple of customers
that have been with us since the beginning.

we stopped at this cool bridge over a stream in
Northville Michigan....


on the way home we were talking about recipes that
haven't been made yet and how we only have 1 month left in the year,
so Pecan Pie was the choice for tonight....

Pecan Pie : pie crust recipe on January 26, 2012
1 cup sugar
1/2 cup karo syrup ( I use the DARK)
1/2 cup honey
3 beaten eggs

beat all of these ingredients together in a bowl.....add in...

1/2 cup melter butter
1/2 tsp vanilla
1/2 tsp lemon juice
2 cups pecans (chopped)
1/4 tsp nutmeg
1/4 tsp cinnamon

whisk it all together.....pour into a 9 inch crust....


 Place some whole pecans on top....just to make it look nice....
Bake at 325 for 90 minutes....


cool before serving......WOW... it was delicious!!!

with today being the last day of November, it was time to add
up the Chicken income and expenses for the month....
so...$82 came in and $80 went out in feed....a small
profit this month, but a profit of any size is good.

I kept track of the eggs that we used here at the farm or
gave away this month....it was 10 dozen for November...
it it normally about 5-6 dozen...but because of the holiday
cooking and eggs for breakfast when our friends were in,
we used quite a bit more.
