OK...that was wierd typing in that date!!!!  it hit over 50 degrees today....crazy winter!!!

Ross and I feeling crummy today...took the day off to rest.....had chicken noodle soup for dinner.

2nd month of 2012 completed......groceries for February totaled: $106.03...we are at $236.91 total for the year so far....I think the goal of $1912 for the year might be attainable.

working on the remod of the landing all weekend

making more cookies for church tomorrow...

Peanut Butter Cookies: (Betty Crocker pg 121)
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter
1 egg
1 1/4 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Mix the first 6 ingredients together....mix last 4 in another bowl....add the 2 together...cover and refrigerate for a couple hours.

Shape dough into 1 1/4 inch balls.....place them about 3 inches apart on a cookie sheet....flatten with a fork in a criss-cross pattern....add decorations if desired.

bake at 375 degrees for 12 - 15 minutes....turn onto a rack to cool.


Oatmeal-Craisin Bars: (Betty Crocker pg 119)
2/3 cup sugar
2/3 cup packed brown sugar
1/2 cup butter
1/2 cup shortening
1 tsp baking soda
1 tsp cinammon
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt
2 eggs
3 cups oats
1 cup flour
1 cup craisins (or whatever you desire)

Mix all the ingredients except for oats, flour and craisins....stir in oats, flour and craisins.

Spread dough on a cookie sheet for bars....bake at 375 degrees for 13 - 15 minutes

we didn't get the 6+ inches that were forcasted for this area.....2 inches at best....Mildest Michigan winter I can remember...but then I have only been here for 20 years.

watched my girlfriends granddaughter this morning.....after breakfast we made SHRINKY DINK braclet charms.....had a BLAST!!!



 for dinner we had chicken breast smothered with bell peppers (frozen from the gaden) and garlic....served over rice....we use chicken stock instead of water to cook our rice in.....and a salad to top it off.....very tasty!!!

ok...so making bread is such an amazing artform......yesterday I tried to make another loaf of sandwich bread using BREAD flour...it did not come out at all and I attributed it to the flour....as I talked to ross about it last night...we came to the conclusion that I had made the milk/water mixture too hot and that had affected the yeast...so it didn't rise properly......made another loaf today with BREAD flour ....followed my recipe EXACTLY and it came out PERFECT....live and learn!!!

On my own for dinner tonight.....so comfort food of course....macaroni & cheese with hamburger!!!

made another sandwich loaf today....this time with BREAD flour...did not come out at all....so back to making it with regular flour (recipe on january 29, 2012)

found a 7up 2 liter in the cupboard that we bought for the grandkids for Christmas and just forgot to get it out.....decided to make my favorite BUNDT cake recipe that calls for 7up.

7up/Sprite Cake: (Allstar Feast Cookbook 1997....page 9)
1 1/2 cups butter
3 cups sugar
5 eggs
3 cups flour
3/4 cup 7up/Sprite
2 tsp lemon extract
1 tsp vanilla
combine butter and sugar...add in eggs...add in flour one cup at a time.....beat until thick....add pop and extracts....beat again.....pour into lightly greased bundt pan. Bake at 325 for 1 hour 25 minutes.... turn out onto cooling rack.  We have used this recipe with Orange pop and orange extract and it tastes excellent as well.

Bundt Cake Glaze: (Betty Crocker page 89)
1/3 cup butter
2 cups powdered sugar
1 1/2 tsp vanilla
2 - 4 Tbsp hot water

melt butter....stir in powdered sugar and vanilla...add water 1 Tbsp at a time until smooth and thick like syrup.




wouldn't win a blue ribbon at fair for presentation...but it tasted wonderful!!!

I am still trying to figure out this BLOG thing...

I now know how to add pictures....so I have edited most of the posts to reflect the pictures we took.

Tonight we had hamburgers on the grill and a chef salad.

Ross suggested that I make bigger hamburger buns than I made last time...so I found a new recipe....gave it a try....changed a couple of things....and we loved it!!!

BIG Hamburger Buns :
1 cup lukewarm water
2 Tbsp butter
1 large egg
3 1/2 cups Flour
1/4 cup sugar
1 1/4 tsp salt
1 Tbsp instant yeast
3 Tbsp melted butter (for on top of buns)

Mix water, yeast and butter together ...set aside...in your mixing bowl...mix sugar, salt and flour together add in egg and then gradually add in your liquid....knead to make a soft, smooth dough.

Cover the dough, and let it rise for 1 to 2 hours or until it has doubled in size......I use the oven trick now for all my rising......heat the oven to 200 degrees while you are putting all the ingredients together....when it gets to temperature turn it off......place your bowl with the dough in it in the oven and cover.

Divide dough into 8 pieces. Shape each piece into a round ball; flatten to about 3" across. Place the buns on a lightly greased or parchment-lined baking sheet, cover, and let rise for about an hour, until noticeably puffy......I do the oven trick again for this.

Brush the bun tops with melted butter....bake in a preheated 375°F oven for 15 to 18 minutes, until golden. Remove them from the oven, and brush with the remaining melted butter. Turn onto a wire rack to cool.

Spaghetti.....it's whats for dinner!!!!

Happy New Year!!! My brother Tim was in from St Louis....we had a great visit and finished our evening with homemade spaghetti....the recipe for the sauce and the noodles follows:

Spaghetti Sauce: We can about 75 quarts a year...this receipe is for a 12 quart stock pot
3/4 full of tomatoes (blanched)
15 beef bouillon cubes
1/3 cup chives
2 cups  Spaghetti Seasoning (GFS)
1/8 cup Garlic Pepper (GFS)
1/2 cup Aujus - paste or powder (GFS)
4 Tbsp Italian Seasoning (GFS)
2 cups diced onions

Bring to a rolling boil...can in quart jars with 1/4 headspace for 25 minutes in a pressure cooker at 15lbs

Spaghetti Noodles: We use our kitchen aid attachment to make this
2 1/2 cups  Wheat Flour
1 cup  White Bread Flour
4 large eggs
4 Tbsp water
1/2 tsp salt

Went grocery shopping today.....spent $72.16 ...so now we are at $104 for the month...gotta keep it at $160 to stay in our $1912 for the year budget!

Got an item that we bought several years....wanted to see if any of you know what it is......couple of hints....it could have been given as a wedding present in 1912.....and it has to do with baking.

Ross made a great ham for dinner tonight, along with potatoes, green beans from the garden and our homemade applesauce... the best part is the amazing glaze he makes...here is his recipe...

Ham Glaze:
1/2 cup Vernors
1 cup brown sugar
1 tsp pumkin spice
1/2 of a lemon squeezed
1 can of pineapple rings....juice goes into the glaze and the pineapple rings go on the ham

heat it all on the stove until it thickens a bit.....these measurements are approx.

Happy Valentine's Day from Ross and Wendy Valentine.....needless to say....we LOVE this day....we normally take it off work and just relax.

Ross made a great dinner tonight....Porterhouse (on the grill outside) , garlic mashed potatoes and I made a traditional chef salad for ross.....but for myself I made my newfound cabbage salad.....when we were canning pickle relish last fall....one of the batches came out with more liquid in it....at the same time I was putting the cabbage into the crock to make saurkraut.....I had some left over cabbage and I poured some of the relish and liquid over the top...added some tomato slices and my new favorite salad was born.

Hug your familes and friends and tell them you LOVE them!

Our nephew CHAD turns 21 tomorrow...Happy Birthday!!!

forgot to post the other cookie recipe from yesterday.....easiest cookie to make and no baking required.

No-Bake Cookies:
3 Tbsp cocoa
1/2 cup milk
2 cups sugar
1/2 cup peanut butter
1 Tbsp butter
1 Tbsp vanilla
3 cups oats

mix all ingredients except vanilla and oats in a saucepan on the stove....bring to a rapid boil...take off the heat...add the vanilla and oats...mix together well.....spread onto a cookie sheet for bars .....I cut them into squares with a pizza cutter now while it is warm and then when they cool they come off the pan really easy......put into fridge to cool......nice and simple.

great day at church....more house cleaning / arranging....finishing the remodeling on the landing and the master bedroom.

a wonderful thing about country living is ..... the neighbor stopped by and asked us if we wanted a rooster...now that is not a question you get asked everyday....told him that we didn't need any boy chickens here....they make my chicken mamas crazy and they are not needed for the girls to lay eggs.....had a great visit...don't get to do much neighboring in the winter.

deep house cleaning day....washing all the wood floors and all the chair rails...took all day but it looks wonderful.

ross set up a computer area in the kitchen today...so I dont have my laptop on the counter....he calls it BLOG CENTRAL.

made some Sugar Cookies for cookie hour at church tomorrow...first time to make them.....they came out just like Betty Crocker said they would...pg 127 for the cookies and pg 86 for the frosting.

Sugar Cookies:
1 1/2 cups powdered sugar
1 cup butter
1 tsp vanilla
1/2 tsp almond extract
1 egg
2 1/2 cups flour
1 tsp baking soda
1 tsp cream of tartar

mix all ingredients together in large bowl....cover and refrigerate for 2 hours.

divide dough in half ...roll to 1/4 inch and cut to whatever shape.

preheat oven to 375 degrees....grease cookie sheets.....place on pan and cook for 8 - 10 minutes or until edges become light brown.....remove and place cookies on wire rack to cool.




Vanilla Buttercream Frosting:
3 cups powdered sugar
1/3 cup butter
1 1/2 tsp vanilla
2 Tbsp milk

mix sugar and butter together....add in milk and vanilla...beat until smooth.



Had fun making them....love trying something new.

Heard word late tonight that Whitney Houston passed....so young.....only 48.  Life is short....make sure you hug your family and tell them how much you love them.

stopped at the General Store (Hanover Market) today for eggs and milk...$4.78 total....OK so 20 cents for a dozen eggs back in 1912 sounds a whole lot better!!!  We will be glad when the chickens get here and they start producing eggs.

made another loaf of sandwich bread today .... used CAKE flour instead of regular flour.....didn't seem to make a difference in taste or texture ( recipe on January 29th ) the other one lasted 11 days....best part is that I can spell everything that I put into it....no 17 letter word for a preservative that i can't pronounce.

we had a great sit down breakfast this morning....normally doesn't happen that often and not during the middle of the week.....to celebrate I made French Toast....now to most of you that would not be a big deal....but considering that I only started liking to be in the kitchen BAKING just a few years ago and in the kitchen COOKING within the last year.....to make Meat Loaf for the first time last night and then French Toast for the first time this morning.....that is saying something.

French Toast : Betty Crocker Cookbook (pg 49)
3 eggs
3/4 cup milk
1 Tbsp sugar
1/2 tsp vanilla
1/2 tsp cinnamon (we like to use pumpkin pie spice)
dash of salt
bread ( we used up the braided bread I made last week )

Beat all the ingredients together.....heat griddle or skillet.....grease with butter.....dip bread in mixture....put on griddle....4 minutes on each side.




Ross is loving this break from always having to be in the kitchen....and I have to admit.....I am having a BLAST!!!!

tonight is MEATLOAF and a salad.....first time I made the meatloaf all by myself!!!

Meatloaf: (family recipe)
3 lbs hamburger
1 1/2 cup milk
2 Tbsp worcestershire sauce
1 tsp salt
2 tsp garlic pepper seasoning (GFS)
2 eggs
1 cup crushed multigrain club crackers
3/4 cup diced onions
1 cup ketchup

mix everything together in a big bowl (except for ketchup)...put it in a casserole dish...pour the ketchup on top and spread out.....cook at 350 degrees for 1 1/2 hours or until the meat reaches 160 degrees, we turn the broiler on for another 4 minutes to help glaze the top.

Had a great morning at church......then the GIANTS won the Super Bowl...so the day didn't end as well......Great DETROIT commercial with Clint Eastwood.....we started eating about 3pm...our menu included:

Shrimp, Spicy Chicken Wings, Chips & Dip, Popcorn, Chicken Tenders & Onion Rings.....OK so we may need to take some TUMS before we go to bed.

What a wonderful day today....upper 40's again and plenty of sun......we had our homemade pizza for lunch and I made my lemon cranberry bread again......this time I used the correct ingredients....ross made me a great rolling pin for the pizza dough.....it is really wide and works wonderfully......I also have a pizza gadget that I use on the crust...it is called a DOUGH DOCKER....I got it at http://www.chefscatalog.com/ ...it makes these indents in the dough which makes the crust crispier.




Looking forward to church tomorrow and then the SUPER food BOWL as we like to call it here......we will be consuming way too much food...but that is part of the fun!!!!  GO Patriots!!!!

the chickens have been ordered......from http://www.mthealthy.com/ ...we will be receiving 40 chickens on March 5th......25 Rhode Island Red - Laying chickens (pullets/girls) and 15 White Plymouth Rock - Meat chickens (cockerels/boys) ..... cost was $102.50. We have had great success with chickens from here before.

I will receive a call from the Hanover post office early on the morning of monday march 5th asking me politely to come get my noisy chickens....will post pictures of the entire process.

Thanks brother Tim for your $50 towards the chickens...we really appreciated it!!!

Ross and I purchased a 2008 cargo work van for him today....his 2003 van has over 425,000 miles on it...the best part about it is that we paid CASH.....no payments!!!  God is good!!!
