had a wonderful time at church today....Amber and Lindsey went along....listen to Pastor Bob's message at http://www.h-hcc.org/.

Amber was on a troop transport bringing the service members back from Iraq and Afghanistan when they stopped at Rhein Main Airbase in Germany.....she bought Ross this bottle of wine and finally had a chance to deliver it in person. We met Amber on a cruise a couple of years ago and we hit it off right away when we found out that she was Air Force....we have kept in touch while she was deployed in both Iraq and Afghanistan....she is heading out west and had a chance to stop by the farm for a visit.

realized that I have not made a Carrot Cake since we started the Living off the Land blog....
...with help from the carrot shredders...

Carrot Cake:
1 1/2 cup sugar
1 cup vegetable oil
3 eggs
2 cups flour
1/2 tsp salt
1 1/2 tsp cinnamon
1 tsp baking soda
1/4 tsp nutmeg
1 tsp vanilla
1 cup walnuts
3 1/2 cups shredded carrots

mix sugar, oil and eggs together......stir in remaining ingredients except carrots and nuts...beat for 1 minute and then add them in.  Bake at 350 degrees for 45 minutes


all finished.....I made the Cream Cheese Frosting (recipe on April 9th) for the top....


Ross made Roast Beef, Mashed Potatoes, Peas and Gravy for dinner...our traditional Sunday Meal
